Instructions

  • 1. Preheat your oven to 400°F (200°C).
  • 2. Line a 9-inch round cake pan with parchment paper, leaving some overhang for easy removal.
  • 3. In a large mixing bowl, combine 2 lbs (900g) cream cheese, 1 cup (200g) granulated sugar, 4 large eggs, and 1 tsp vanilla extract.
  • 4. Mix until smooth and creamy, but do not overmix.
  • 5. Pour the batter into the prepared cake pan.
  • 6. Bake for 50-60 minutes, or until the top is dark golden brown and the center is slightly jiggly.
  • 7. Remove from the oven and let cool to room temperature.
  • 8. Once cooled, refrigerate for at least 4 hours or overnight.
  • 9. To serve, remove the cheesecake from the pan using the parchment paper overhang.
