Vegan Tikka Masala

Ingredients
1 can of chickpeas
1 onion, diced
3 cloves of garlic, minced
1 inch piece of ginger, minced
1 can of diced tomatoes
1 can of coconut milk
2 tbsp of tikka masala spice blend
1 tbsp of olive oil
Salt and pepper to taste
Fresh cilantro, for garnish
Instructions
1. Heat 1 tablespoon of oil in a large pan over medium heat.
2. Add 1 diced onion and cook until translucent, about 5 minutes.
3. Stir in 2 cloves of minced garlic and 1 tablespoon of grated ginger, cooking for another 2 minutes.
4. Add 1 diced bell pepper and cook for an additional 5 minutes.
5. Stir in 2 tablespoons of tikka masala spice blend and cook for 1 minute.
6. Pour in 1 can of coconut milk and 1 can of diced tomatoes.
7. Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally.
8. Add 1 can of drained and rinsed chickpeas and cook for another 5 minutes.
9. Season with salt and pepper to taste.
10. Serve the vegan tikka masala over cooked rice or with naan bread. Enjoy!
