Vegan Tikka Masala

Ingredients

  • 1 can of chickpeas
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 inch piece of ginger, minced
  • 1 can of diced tomatoes
  • 1 can of coconut milk
  • 2 tbsp of tikka masala spice blend
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  • 1. Heat 1 tablespoon of oil in a large pan over medium heat.
  • 2. Add 1 diced onion and cook until translucent, about 5 minutes.
  • 3. Stir in 2 cloves of minced garlic and 1 tablespoon of grated ginger, cooking for another 2 minutes.
  • 4. Add 1 diced bell pepper and cook for an additional 5 minutes.
  • 5. Stir in 2 tablespoons of tikka masala spice blend and cook for 1 minute.
  • 6. Pour in 1 can of coconut milk and 1 can of diced tomatoes.
  • 7. Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally.
  • 8. Add 1 can of drained and rinsed chickpeas and cook for another 5 minutes.
  • 9. Season with salt and pepper to taste.
  • 10. Serve the vegan tikka masala over cooked rice or with naan bread. Enjoy!
